This project is funded by a seed grant from the University of Tennessee Food Safety Center of Excellence and a grant from the USDA National Integrated Food Safety Initiative (NIFSI). Integrated food safety programs in NIFSI support multi-state, multi-institutional, multidisciplinary, and multifunctional research, extension, and education activities. Special emphasis is given to research describing multifunctional activities (for example, research that contains research, education, and extension components). Among the many food safety topics addressed, NIFSI supports food safety education grants for consumers across the lifespan, including families with young children. The Principle Investigator of this grant is Dr. F. Ann Draughon, the Project Coordinator is Jennifer Richards, and co-authors are: Janie Burney, Mary Jane Connelly, Peggy King, William Morris, Harry Richards, and Gary Skolits. Ashley Pedigo is the Graduate Research Assistant. Additional support has been provided by the Food Safety and Technology Department, the Institute for Assessment and Evaluation, and Instructional Technology and Educational Studies Department.
